Ingredients for making Passion Fruit truffled Easter Egg:
500 grams of milk chocolate or semisweet
200 grams of white chocolate
1 box of sour cream
¼ cup of concentrated passion fruit juice
chocolate confections to decorate
How to make a Passion Fruit truffled Easter Egg:
Start by preparing your truffled chocolate egg by chopping the milk or semisweet chocolate into pieces. Put to melt in a bain-marie or microwave, on maximum power, pausing every 30 seconds to stir.
If you're not using fractionated chocolate, see how to temper chocolate so it doesn't melt once it's done.
Tip: By chopping the chocolate very fine you can make it melt faster. Use quality chocolate as this makes all the difference in the final taste!
When the chocolate is well melted, spread a thin layer in an Easter egg shape. Place the pan face down on a baking sheet lined with parchment paper or aluminum foil to drain excess chocolate.
Tip: Use chocolate molds of your choice, in this case I used 50 gram egg molds. If using 250 gram molds, this recipe yields about 4 eggs.
Store your homemade Easter egg in the refrigerator for 10 minutes and repeat the chocolate layers 1 or 2 more times to get a more consistent shell.
While the last layer of chocolate sets in the refrigerator, prepare the passion fruit truffle filling: chop the white chocolate and melt in a bain-marie or microwave in the same way as you did with the previous chocolate.
Tip: Remember that white chocolate melts faster, so be careful not to let it burn.
When the chocolate is well melted, let it cool a little. Then add the cream and passion fruit juice and mix thoroughly in a bowl or blender. This is the passion fruit stuffing for Easter egg!
